As you well know, I cooked up a storm over the Christmas season. And along with cooking comes cleaning. And along with cleaning comes exhaustion. And along with exhaustion comes simplifying. So that's what this WIMM post is all about! After prepping big fancy meals and desserts for hours and hours over the last few weeks, I am sharing a simple recipe with you that I hope your family will enjoy like mine does! And this post-holiday dish is lighter, easier and quicker than most! Hooray for simple meals!
LEMON GARLIC SHRIMP ALFREDO
{serves 4-6}
1 pound medium shrimp, peeled and deveined, tails intact
*I use frozen raw shrimp that I thaw in a strainer by running water over them*
2 tablespoons butter + 1 tablespoon vegetable oil
2 large cloves garlic, minced
pinch of cayenne pepper {optional}
Juice of 2 lemons
2 tablespoons white cooking wine
2 tablespoons fresh parsley, chopped
alfredo noodles, boiled al dente and drained
your favorite jar of alfredo sauce
Boil noodles in salted water til al dente and drain. Simmer store-bought alfredo on the stovetop. {Hooray for simple!} Season the shrimp with salt and pepper. Heat 2 tablespoons butter and 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add shrimp, garlic and cayenne, tossing until the shrimp are pink, 3-4 minutes. Add cooking wine and juice of 2 lemons, stirring quickly. Remove from heat and toss in parsley to coat. Season with additional salt and pepper if needed. Divide pasta into shallow bowls, topping with alfredo sauce. Spoon shrimp and sauce over pasta. Serve with fresh pepper and crusty bread.
